My trip to Lyon draws to a close today. I have enjoyed every minute of it. My friend Véronique has done her very best to fulfill my every wish! The above photo shows an andouillette with potatoes gratinées. There are several types of andouillette and are basically composed of pork innards.

I don't believe I've ever had andouilette so I'm going to google it, and the potatoes look so incredibly delicious!
