The Tiniest Leaf

A head of cabbage is made from layers of leaves, which form a ball. Here you can see the tiniest leaf inside a head of cabbage that I made a salad out of. Serbs LOVE cabbage in all its forms, but usually use the white cabbages in salads and for sauerkraut and stuffed cabbage rolls, for example. In the winter, it's common to see a huge plastic barrel filled with heads of fermenting cabbage on people's porches. Red cabbage, much higher in antioxidants, is unimaginatively shredded or sliced for slaw. (Sometimes a head is thrown into the barrel to add color, and the sour cabbage juice is a sure cure, so they say, for a hangover.) I like to jazz up my slaw by adding some shredded carrots, walnuts, and dried cranberries, with a vinaigrette dressing.

I just had to enlarge this. I am a sucker for purple. It's incredibly sharp and detailed. Bibi you are really a real understanding of this photography lark. People take photos, not cameras. You get it, and it shows.

Reminds me of Belize. It seem like cabbage is the only vegetable that Belizeans eat regularly.

Red cabbage reminds me of Summer. And sour cabbage of Winter & Fall. We even eat it for Christmas.

What a fab photograph. I love cabbage too but I don't care for the fermented cabbage, I must confess. The colours in this photograph are amazing. Slaw I love, and your recipe is something I will try. Never thought of adding dried cranberries.

I saw the tiniest leaf. You make a head of cabbage (??!!?) look very touching. Nice.
(Had some GREAT sarma at my aunt's just after Orthodox Christmas...I know how to make it, but never do. Thank goodness for relatives like that.)

Beautiful! What a great vegetable. As a kid, I used to eat the chunky white stem (not as photogenic, but yummy) as a treat while my mom was making the salad. Thank you for the inspiration.
